Lunch…no fun title, can’t think of one

NNo pictures this time, I ate it before I got the chance to take any…

You need:
One whole wheat tortilla
Half a chicken breast, cooked and diced
Two tblsp of grated cheese, any kind
Two slices of tomato
Something to grease the pan with.
I used a horse shaped cookie cutter to make my sandwich into a fun shape ( and makes it less calories because you don’t use all the tortilla!)

Cut folded tortilla with cookie cutter (make sure its a big one), so that you have two identical shapes.
Heat what ever you use to grease pan, put one of the tortilla prices in it. Wait for it to heat up.
Put some of the cheese, about a quarter of it, make sure its spread out.
Let it melt a bit. Add chicken.
Add more cheese, let melt.
Remove half tortilla.
Put the other tortilla in the pan.
Add cheese again. Let melt a bit.
Add tomato slices. Then more cheese.
While still in pan, put the other tortilla on it so that it makes a sandwich. Press down. Flip a few times. Remove from pan. Eat.

Contains 200 calories, but my tortillas are high calorie (190 per tortilla) so if you use some with a lower calorie count it would be lower.

I made it with friends and ate more than a quarter and don’t feel guilty. Its cheesy. Its gooey. Its not pasta. Its veggies. It can do no wrong, I strongly suggest you make it.

Queen of snacks

Yes, I am a compulsive snacker. I’ll eat any snack food. Anywhere, anytime. Especially of its sweet. So you can imagine my joy when I found a 30 calorie cookie recipe.

3 mashed bananas
2 cups rolled oats (aka quick oats)
1 tsp baking powder
Dash of salt
Dash of cinnamon
1\4 cup apple sauce
2\3 cup almond meal
1 tsp vanilla
1\3 cup shredded coconut (unsweetened)
Chocolate chips or raisins to fit your fancy.

Mash bananas, add vanilla and apple sauce, set aside. Mix oats, cinnamon, baking powder, salt, coconut and almond meal together. Add dry ingredients to wet. Fold in chocolate chips or raisins.

Bake at 350F for 20 minutes, until golden brown.
