Scones and Supper

OK, like promised I had scones. A lot of scones. Recipe bellow. ( note: I didn’t pit in chocolate chips, I sprinkled raisins and cinnamon on top) Because of this I’m having a light supper. Egg (62cal) gluten free bread ( 40 cal) and low fat cream cheese (20 cal).

Because its early, ill probably have a snack later.

Breakfast to Tea Time

So today I had a slightly bigger breakfast. Its not bad. Gluten free toast with low fat cream cheese ( I love cream cheese. I could eat cream cheese all day) and this chocolate muffin thing I found on pinterest, link bellow. All together it was about 300 calories. Not too shabby, but not too great. I’m not having lunch, instead I’ll have a late tea-time, seeing as I’ll be out applying for summer jobs. So I’ll show my pictures of low calorie cucumber sandwiches and scones. And recipes.

Queen of snacks

Yes, I am a compulsive snacker. I’ll eat any snack food. Anywhere, anytime. Especially of its sweet. So you can imagine my joy when I found a 30 calorie cookie recipe.

3 mashed bananas
2 cups rolled oats (aka quick oats)
1 tsp baking powder
Dash of salt
Dash of cinnamon
1\4 cup apple sauce
2\3 cup almond meal
1 tsp vanilla
1\3 cup shredded coconut (unsweetened)
Chocolate chips or raisins to fit your fancy.

Mash bananas, add vanilla and apple sauce, set aside. Mix oats, cinnamon, baking powder, salt, coconut and almond meal together. Add dry ingredients to wet. Fold in chocolate chips or raisins.

Bake at 350F for 20 minutes, until golden brown.
